When you buy eggplants choose those that are firm and look heavy in size. Bruised, withered or discolored plant will not do. Look at the skin. It should be glossy and smooth. Store eggplants in the refrigerator before consumption keeping the skin out of any contact. Do not use carbon steel knife but use a stainless one. Avoid so reaction of the knife with phytochemicals.

Make thick slices when you cut eggplants. Bake them; take bread on put Parmesan cheese on top.

The eggplant when fresh has a bitter taste, but you can solve the problem. The flesh of the plant can taste tenderer.

Cut the eggplant and sprinkle it with salt. Leave the pieces in salt for about thirty minutes.

The salt will draw the moisture out and the eggplant will become tendered with less bitter taste and more palatable. The procedure will also make the oil better for absorbing when you cook the plant. To remove salt after cooking the eggplant just rinse it with water.

The eggplant can serve an interesting addition to many dishes due to their unique flavor and texture. You can prepare them whole, sliced o cubed. You can fry them, bake, roast, grill or steam.

Helpful hints

Take pizza crust, put the sliced vegetable on it and add sauce of tomato. Choose cheese or other any product for topping. Now you get a low-calorie meal. You can also stir-fry some chunks of the eggplants with any other ingredients that are your favorable.

Cut the eggplant lengthwise into thick slices and grill them. They can be served on their own or in a burger

Make strips cutting the eggplant. Bake the strips in the oven and get healthy fries. Thick slices of the eggplant plus bread, adding all to the pasta will make a tasty meal for you.

Are there any health risks from eggplants consuming?

Antioxidants contained in the eggplant make the taste of the vegetable bitter and they are unpleasant to eat. Now, scientists think how to improve the eggplant genetically since the vegetable is extremely healthy beneficial.

The studies show that eggplant is rich in nasunin which binds with iron removing it from cells. When there are cases of excess of the iron in the organism the eggplant is not recommended for those who have high level of iron in the organism.

Oxalates, contained in eggplants can cause kidney stones formation. As foe kidney stones, they can lead to oxalate nephropathy, and sometimes, to the death of kidney. If one has kidney stones problem he is not recommended to consume such products as eggplant. They are to limit oxalate-containing foods consumption.

The suggested pattern of eating is mostly important for prevention of diseases and achieving normal health. Do not concentrate on certain foods and bring variety in your diet ration.
